Mosaic is named for the remarkable mosaic of flavors it delivers — blueberry, mango, stone fruit, and a dank, resinous undercurrent all in a single hop. A daughter of Simcoe released in 2012, it quickly became one of the most popular aroma hops in craft brewing and a fixture in modern IPA hop bills.
With alpha acids of 12%, Mosaic carries plenty of bittering strength, but like its famous peers it is at its best late in the process, where its layered fruit character can fully express itself.
